Beyond the decadence of the French Quarter, families throughout Louisiana celebrate Mardi Gras by spending time together and attending the many parades.

Boiled Seafood







There's nothing like Boiled Seafood for a "late beakfast" or during a brunch in New Orleans. Cafe au lait, shrimp, crawfish and a little remoulade sauce...


Louisiana crawfish come from the Atchafalaya Basin or farm-raised often in conjunction with rice production.

BOUDIN



Boudin is a favorite item in the Cajun diet of the Acadian immigrants in Louisiana. Catholic Cajuns often give up their favorite foods, like boudin, as a penance during Lent.
